Personally at least the problem with GMCs and SuperHeavies is less their survivability and more then absolutely insane weaponry they bring along with them. Huge amounts of D weaponry, stomps, and 7" and 10" blasts, often with Ignores Cover on them are just gross.
Honestly, if I'm going to go a step further it's those huge templates that need limiting more than even large creatures. If you asked me to pick one thing that the Eldar codex REALLY screwed up in terms of "normalizing" stuff, it wouldn't be GMC's or D weapons, but the damn 10" blast coming along for the ride on Eldritch storm. Nothing says "I'm having fun" like 2 full squads being covered by a power and removed on 2+ unless they have Terminator armour, and that is coming from a 125 point Farseer, not a 600+ point Superheavy. Really concerned about that one on some of the more terrain-light tables at the Club Championship.
I know with some of the big models the firepower might be somewhat in line with their points cost (IE this 600 point unit removing a squad in one shot is effectively the same as that squad being killed by 4 150 point squads shooting it), it just takes away from the feeling of being involved in the game to have some giant cannon pointed at you and be told "remove that whole squad on 2's" - having to make 60 saves and failing 10 of them over the course of 3 or 4 squads shooting just feels so much more like something is happening.
