On the plus side, having so many points over 2000 means you can potentially make multiple themed lists. If that's something that appeals to you that is.

There will definitely be many lists to play around with. Sadly, I'm a solid "I want one of everything" type guy, rather than motivated by focusing in on a theme. The choices have become much harder for me haha.

That's very fair. It's the whole pokemon "gotta have them all" mentality at play. Maybe that's why I'm drawn to armies with less options? For example, while I think Stormcast have amazing models, they have so many different types that I couldn't possibly pick what to use. Choice paralysis I think it's called.

Unfortunately a lot of Sigmar armies basically want you to spam skew lists when sub allegiances are boring junk like 'take only gore-gruntas' :/

Stormcast is actually pretty easy for me, because I just ignore the existence of a big chunk of their line. With a few exceptions (mostly heroes), I'm not interested in anything before the 3.0 launch. You're ugly and I do not love you, haha.
I think the new BoC tome is a bit better with not pushing the skew lists, if only because the units that the subfactions buff aren't ones you can spam to victory. Two make ungors and gors a bit more resilient or tricksy, another buffs cygors, and the last gives you supercharged chaos spawn. They can all be useful, but they don't help your hammers be better hammers.
Ironjaws would definitely be a good choice for me. I might actually have everything painted if I wasn't constantly excited to try out a new unit instead.

My chief frustration with ironjawz (besides some more general 'first 3.0 codex' missteps) is that you get siloed into basically a netlist based on your sub allegiance, all of which basically mandate a maw krusha since that unit props up the army.
-Ironsunz wants you to play double maw krusher and is pretty significantly worse if you don't because you simply won't have the CP to feed a larger model count.
-Bloodtoofs wants you to bring nothing but gore-gruntaz which also cost too much to buy a la carte so f that lol.
-Da Choppas is a little more open minded but still basically wants you to bring mostly brutes due to ardboyz being kind of poor for a host of reasons these days.
Ultimately I mostly want to use Ardboy focused armies like were the ideal in 2.0 so I just end up with an ineffective force straddling two archetypes.
