Trygon is a 'Kill X' unit. It will completely murder (nearly) anything it charges. It will be top priority for your opponent to kill.
Carnifex is an Spearhead, he takes some serious firepower and dedication from your opponent to put down, and can do some serious damage on his own. But he is really most effective against medium infantry, and light armour
They are completely different in what they provide to your army. In your list, the Trygon is far better.

oh yeah, right, my gaunts/stealers/hive guards can take good care of infantry and light mech

carnifex is an anti-infantry if armed with devourers, anti heavy mech if armed with double scything talons. I'd never waste him on light armor unless all your hive guard are dead and there's absolutely no other targets...
don't recommend using a fex and a pod because you can only run them in singles. A single carnifex, out of buffing range of a tervigon or other psyker, is one volley from long fangs away from dying. Huge point cost for that. The advantage of pairs and walking with your army is that they can be buffed, and can change positioning to take advantage of wound allocation... however they're pretty pricey in that configuration for sure.
a trygon is an infantry killer, dicing up pretty much anything without a storm shield or that is purifiers. It can handle mech with smash, but I'd not waste it's potential chasing rhinos... it requires a FNP or endurance buff because they attract a ton of firepower.

wait... since tervigons buff UNITS would a brood of 2 to 3 carnifexes all get the buff?

yes... it is a unit... which is why walking squadrons of carnifex are better than podding them in, because they gain greater benefit from the FNP/Endurance buff and can shuffle around to bring wounded ones to the back

I should of specified I was referring solely to the Dakkafex, who I feel is very strong against light armour, assuming there's no infantry for him to butcher. Not the CC variants. And Yes, a unit of Carnifex benefit from FNP the same way a unit of guants would. If only 1 guant got FNP would you ever cast it on them?
