I am wondering what Grey Knight psychic abilities are like (and any changes with the new dex) with regard to how tyranid shadow in the warp will work (or not) as well as nid units such as zoanthropes or tyrant paroxysm using psychic powers (so Grey Knights psychic defence).
Do they use force weapons?
Do Grey Knights use hoods or have something else that is better?

I dont know about physic powers cause i was looking into just their basic troups but for force weapons i know each units of grey knight troops, Justicar's, Terminators, brother-captians and grand masters each have a nemesis force weapon. For each it gives a +2 to Strength, all but the Grey knights it is also a Power weapon, and for the Grand master it is also a force weapon. So they do use force weapons. I know they have an option for hoods and Brother-captians can take pscyic abilities.

Only a Grand Master, Brother Captain Stern (if I remember right), and any inquisitor can take a Force Weapon.
As for Psychic Powers they have a few. The 2 most common you will see are "Hammerhand" (makes the model using the power S8, but can't use weapons when attacking in CC), and "Holocaust" (put a large blast in b2b with the model and all models hit take a S5 hit at I2 with saves allowed...I could be wrong about the strength value). Both of these powers are used in the assault phase if I remember right
Units of GL Termies can take Holocaust, and I believe all HQ choices can take any psychic powers they want as long as they pay the points cost for it.
They have shooting power, one that makes it impossible for Daemons to get within something like 6" of the model/unit. One makes Daemons roll 3d6 on instability (useless in this edition) and one of 2 more that I don't remember.

The current grey knight psychic powers are currently really rather lack luster which is why even though a lot more guys in their army have psychic powers than a normal SM army, you don't see spychic power spam when you face them. They do have access to the old unlimited ranged psychic hood but you generally don't see that because all grey knight squads have a pyshic hood that triggers if you target them with a spell, so that takes care of a lot of abilites already.
I could very easily see them still keeping the ability to have hoods if you target them with a psychic power although it will probably become actual hoods are only for inquisitors or if they get a librarian HQ. From a game balance point of view, I hope they don't add in anything stronger at stopping psychic powers than a hood. I could see all HQs, and any sargeants for squads except basic troops and purgation(devestator equiavlent) having access to psychic powers.
Oh, yes all grey knights have 'nemesis force weapons', they just only count as a Force Weapon that slays you outright (for grey knights it isn't 'instant death' so it ignores eternal warrior!) if they pass a psychic test for the grand masters and stern
